I've been trying to do the 5:2 diet. Was getting a bit bored of Beans on Toast in the evening for my Low Cal diner. Actually that's not true - it's impossible to get bored of beans on toast :-)
However, and I know this is stating the obvious, but I was absolutely gobsmacked to really understand how many calories are in veg....Answer - bugger all...

Aubergine, courgettes and the rest
And ended up with this little beauty - less than 300 cals per portion (well depending on portion size and I must admit mine was a bit large as it was soooo good). Plenty for the freezer also.
