Slow-cooked pork with ginger, chilli and sweet soy sauce (kecap manis)

Something interesting from Rick's great Far Eastern Odyssey book - rapidly becoming a favourite. Kecap manis is the key ingredient - the unctuous sweet soy from Indonesia.
