For some reason I've never really taken to Italian food in the way I've embraced other cuisines. However that said I do really appreciate a decent Italian meal but it has to be done well. A plate of pasta slop is not cooking.
One of the highlights is a lovely creamy carbonara. I can remember fondly sitting on my own in Miami beach having one of the best examples many moons ago.
Anyway - decided to give it a go
It's all about eggs and cheese
