Lamb Chops with Brinjal Bhaji

Lou was out and I was in need of meat and curry !

I'd had a Brinjal Bhaji a few days earlier and so decided to make one.

This was actually 'aubergine with pickling spices' according to the recipe I was using

Looking good so far

Crisping up the fat before...

a quick sear....

I had the whole pack to myself !!

With the lovely aubergine curry for accompaniment !
