Having bought Ripailes recently, and noted it's large selection of veal recipes, then it was time to source some.

My local butcher only had escalopes in - there was not unfortunately the demand for any decent cuts. However, whilst down at Borough Market shopping for the Cassoulet ingredients at the Ginger Pig, I noted a couple of juicy chops staring up at me.

Was it worth it? You bet! Juicy & thick, a lamb come beef taste and yep - served up with some left over Happy Faces amongst other random fridge left overs. Awesome.
